Freezing for conservation

Liquid nitrogen plays an important role in the controlled rate freezing and cryogcryogenic conservation of Lactic acid bacteria (LAB) and probiotic Bifidobacteria. The cold energy and the low temperature of liquid nitrogen allow fast freezing, with minimal damage, so that they survive the freezing process.


Cultures or probiotics for inoculation are often distributed under the form of deep-frozen pellets. Dedicated pelletizers use liquid nitrogen immersion for high speed production of droplets of these cultures.
